Curry rice for dinner.

So I was looking around the kitchen for dinner and saw a few leftovers that I could pull together into something.

Curry Rice

1) I started off heating olive oil on medium heat. Once is shimmers, I add half of an onion that was in the refrigerator. Add salt and pepper to season.

2) After the onions have softened, add the rice and stir until the oil is absorbed. About 5 minutes.

3) Once the oil has been absorbed, add enough broth to cover the rice. Stir to incorporate.

4) Cook until absorbed and stir often. I added a tablespoon each of curry powder and turmeric. I like things spicy!

5) After the broth has been absorbed add more to cover the rice, stir to incorporate and then cover the pan and turn to low.

6) Once the broth has been absorbed its ready. You can add meat or broccoli and cauliflower, if you wish.

And if I had a piece of naan bread it would be perfect but I am in for the night!

Gus’s continued recovery! Fall things.

Gus

Gus has continued to recover well. Friday the staples were removed from both incision sites on his leg. He has lost about 7 pounds but is eating healthy and is beginning to walk on the leg again.

When the temperatures are high he enjoys the cool tile floor in the bathroom or kitchen floor in front of the HVAC vent.

Spices…….

I stopped by Penzey’s Spices in Cameron Village Shopping Center Friday after Gus’s visit to the vet hospital to smell the herbs and spices and see if there was anything I might want? They have some nice boxed spice that would make great gifts. It’s hard to believe Christmas is only two months away!

NC Farmers Market

I also stopped by the NC Farmers Market. Pumpkins and apples are in! I think the white pumpkins are so unusual! They have all kinds of apples, gourds, and tons of other Fall things.

It’s the first time I have been there on a week day in a while and it was pretty busy. I was amazed by some very large marigolds.
